I love this curry.
The attempt inspired by a video of an old Indian women processing the cooking of industrial quantities of this to feed a school. A little research later and I decided that this was a close approximation of what she was doing in that. Quite often this kind of process, ending up in picking a random recipe from the internet, does not produce consistent results. However I stumbled into perfection with this one.
I think frying the paneer as a first step is a good move, cutting the video rather than the recipe… but I don’t really know what I’m talking about with paneer, so who knows?
