{"id":2420,"date":"2020-05-06T21:14:56","date_gmt":"2020-05-06T21:14:56","guid":{"rendered":"https:\/\/foodfoodeateat.co.uk\/?p=2420"},"modified":"2020-05-06T21:14:56","modified_gmt":"2020-05-06T21:14:56","slug":"osborne-clarke-miso-egg-noodles","status":"publish","type":"post","link":"https:\/\/foodfoodeateat.co.uk\/?p=2420","title":{"rendered":"Osborne Clarke Miso, Egg &amp; Noodles"},"content":{"rendered":"<p>So Lisa said her work canteen did a miso, noodle broth with tofu and she really liked it. \u00a0Armed with this information I created the following. \u00a0Actually extremely good. \u00a0Red miso paste was used, but I expect others would work just as well.<\/p>\n<p>Dry out firm tofu block by weighing it between paper towels for 10 or 20 minutes. \u00a0Cut into 1-2cm cubes, \u00a0coat with seasoned flour\/cornflour\/semolina.<\/p>\n<p>Onions thinly sliced and mushrooms thickly sliced, gently fried together to soften but not colour; <\/p>\n<p>Fry the coated tofu until lightly golden and crispy.<\/p>\n<p>Meanwhile roughly 800ml of stock (in this case chicken) added to a saucepan and two heaped teaspoons of miso paste, bring to simmer.<\/p>\n<p>Add chunky noodles to the broth, simmer until cooked.<\/p>\n<p>Add onions and mushrooms to bowls, poor in broth and noodles, top with crispy tofu and parsley.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>So Lisa said her work canteen did a miso, noodle broth with tofu and she really liked it. \u00a0Armed with this information I created the following. \u00a0Actually extremely good. \u00a0Red miso paste was used, but I expect others would work just as well.
