The sponge was firm, not quite rubbery, but not too far away. \u00a0I’m not sure if I did something wrong here or if the recipe is not great. \u00a0More care needed when mixing perhaps? \u00a0Wrong sized eggs maybe? \u00a0Not certain.<\/p>\n
The custard seemed perfect and thick initially, but left for a few hours on the window sil on a wet day it became extremely liquid and could no longer be used as a filling. \u00a0Possibly not the recipe’s fault, but I’ll probably use another recipe regardless.<\/p>\n
The cream yoghurt combo was perfectly lovely, but I don’t think it gains anything over just whipped cream.<\/p>\n
Macerating the strawberries in elderflower cordial is wonderful, and one of the few elements I’ll be taking forward into the next trial.<\/p>\n
