    Quick Sriracha Greens

Second run out for this (See here), it’s quick and delicious. Only difference this time is that I finished the egg as described in the recipe under the grill. Probably not worth the hassle, but does give the egg a lovely shine. From Doctor’s Kitchen, pg. 154

    Split Pea and Barley Thing

This was thrown together with store cupboard items, just happened to find a recipe that fit the bill almost perfectly. Takes a little while, but very low effort. Like a speedy, light, Mediterranean dal, albeit the chestnuts in the recipe were omitted and would change things up no doubt. There are lots of ways you could modify it, different spices, a bit of acidity, throw in other herbs. I used chives rather than parsley, you could also go for coriander happily. Handy dish. From new Doctor’s Kitchen book

    Herby greens, mushies and chicken

Loved this, so simple, savoury and delicious.  On Lisa’s insisting I ran with the very optional suggestion in the recipe to add chicken… I think I may have gone overboard.  But quite excellent. The Doctor’s Kitchen – pg. xxx

Chicken skewers, tomato and spinach salsa and pea chutney

This is a triumph, honestly.  I’m continually impressed by the recipes in The Doctor’s Kitchen, they are always so well considered and packed with flavour. This was done exactly as described except for two items:   Firstly, I probably quadrupled the quantity of cherry tomatoes in the salsa and have no regrets.   And secondly, due to a lapse in organisation I failed to thaw the peas… But I charged on regardless and found that it created the most delightful, sweet and sharp granita that worked actually incredibly well.  This would work with so many dishes, possibly more suited to…

    Warm Sriracha Salad

Quick and absolutely delicious, particularly as I used ready made sriracha instead of making it. Replaced the kale with spinach added at the last minute. Very valid option, in fact you’d have to be more careful with kale, I expect. The timing and stronger flavour would be much trickier.

    Persian Chicken & Roasted Carrots

The Doctor’s Kitchen, pg. 178 After the frying then the oven, the onions caught a little, although not such that the bitterness came through.  Also with the chicken the pan was a little crowded and struggled to crisp up while frying.  Would use a larger pan and have a little care with the onions. Lisa helping! Mixing the greek yoghurt, sumac and lemon. The carrots were roasted for 20 minutes, but covered with foil on the bottom shelf they were in the oven for much of the time the chicken was in there also. Really enjoyed this dish.  The chicken…

    Butternut Massaman Curry

The Doctor’s Kitchen, pg. 206 I’ll be honest…  Used the whole can of coconut milk.  What on earth am I going to do with a partial can of coconut milk before it goes off? Burnt the almonds. Seem to taste fine so I’ll persevere with these ones.  So I definitely started this incorrectly.  The initial frying of the paste and cream should have been much drier, such that the butternut chunks then take on colour. But it seems fine.  In fact, in hindsight the milk should have been cream… But where the hell do you get that?

Japanese Greens & Mushroom Stir Fry

Doctor’s Kitchen, pg 159 Used buckwheat soba; Used beansprouts instead of spring onion, I believe the onion would be better, but the beansprouts are slightly better FODMAP.  Couldn’t find sesame seeds…  Added chili furikake instead, this with the sliced chilli also it was a little too hot.  Really good, very quick.
