Vegetable Lasagne

Really excellent, healthy lasagne. Refused to use nut milk for the roux, it’s just not a thing worth messing with if you otherwise have no grudge with dairy. On the subject of which, as I have learned is always required, I doubled the quantity of the roux and this was barely enough. Perhaps it is something I’m missing here, no recipe specifies enough… But I rather think it is others who are wrong in this case.

Pesto is a lovely addition, lifting and seasoning the dish and removes any longing for the meaty undertones of a normal lasagne.

I added a sprinkling of parmesan which was well worth it.
