Roast Topside of Beef & Carrots

So this takes a while… 4 hours in total. Be prepared…  I don’t know exactly why, perhaps the cut was actually slightly different to the one recommended, but the beef shredded during carving. As such it ended up as a stew.

Is good. Definitely lean, which is great. Although I’m certain that this would be tastier with a fatty joint, and that the topside would have been better served dry roasted.  I might pull back on the tomato and paprika slightly.  

The treatment of the kale is great, shows you don’t need butter to make kale edible.
