    Something… No wait! Schnitzel!

I have no memory of this, other than a vague sense that it was very tasty… it looks very tasty! Update: it all came back! This is another attempt at Tom Kerridge’s turkey schnitzel, and again, it was pretty great. Used some preserved roasted peppers draped on the top and they brought a greater balance to the tightrope of strong flavours that this dish walks. From Tom Kerridge – Dopamine Diet, pg. 208

Pork Tenderloin with Ponzu Dressing and Roast Potatoes

Run out number 2 for this ponzu pork, and this was a significantly better cooked joint, albeit less attractive in presentation… If anyone cares. Looking back at the first attempt (here), the picture doesn’t necessarily tell the truth. This time the meat was significantly more moist and flavoursome, mostly due to not blindly trusting the time on the recipe and using a meat thermometer. The joint was a little smaller than it was previously, less than 400g, and required a couple of minutes fried on each side, then about 10 minutes on one side, then 8 minutes on the other…

    Stuffed Peppers, no carbs

Tom Kerridge – Lose Weight, pg. 196 There might be something to using feta or halloumi instead of mozzarella here, I felt most of it had melted away and burnt in the tray and I’m not sure I got the benefit. Very large peppers are also required for a full meal, these were pretty tiny. The filling is great, very tasty, I are most of it from the pan given that it wouldn’t fit in the peppers. I also added some sriracha as well as some dressing from yesterday which really helped. Finding a way to get the peppers a…

Roast Topside of Beef & Carrots

Tom Kerridge – Lose Weight pg. 156 So this takes a while… 4 hours in total. Be prepared…  I don’t know exactly why, perhaps the cut was actually slightly different to the one recommended, but the beef shredded during carving. As such it ended up as a stew. Is good. Definitely lean, which is great. Although I’m certain that this would be tastier with a fatty joint, and that the topside would have been better served dry roasted.  I might pull back on the tomato and paprika slightly.   The treatment of the kale is great, shows you don’t need…

    Pork Tenderloin with Ponzu Dressing

Tom Kerridge – Lose Weight, pg. 166 The pork is taking more like 20 or 25 minutes, rather than 7… Confusing. Maybe this is much thicker than the intended piece? It was the same weight though. Lovely bok choi. Messed the pork around.  The recipe says 7 minutes in the oven, but there’s no way…  Took it out to rest before realising it wasn’t done. This took 30 minutes to reach temperature. Really nice, pork dried slightly, but not so bad. Trust the thermometer. There were lovely pan juices to drizzle over the pork. The ponzu is great. The bok…

    Lamb Mince Curry

Tom Kerridge – Lose Weight, pg. 160 Many onions… too many? No puy lentils, so beans. Very nice, does work with beans, needs a good couple of good pinches of salt. Could punch up the meat with some flavour in the oven. Wouldn’t lose any of the onions.
