A variation on a perviously cooked dish, no soft cheese was available so feta was experimented with, thrown in to the roasting dish with the roots. It seemed like this would be too much for it, with a part way trend towards becoming a burnt liquid, but blind faith was had and it ended up just perfect, squishy but firm and caramelised. Also in the mix this time were beetroot and green pepper, both fine additions. Though I certainly missed the parsnip. King of the roast vegetable… Ok, I’m not sure about that, the roast vegetable bracket is a fiercely…

Exceptional thing to do to a slab of feta. Easy, quick, delicious. A subsequent ordering of the dish in a taverna revealed that you can really push the grilling quite far and let the feta soften more than I did here. Either way though, this should be repeated often. Greek-Style Baked Feta Recipe

It’s been a while since I have cooked a barley risotto, and a fine thing it is. In truth I feel that it shouldn’t really qualify as risotto, but this sub-classification is a convenient shorthand for a vaguely risotto-esque thing. I enjoyed this, the ragu is quite acidic as are many of Tom Kerridge’s, and I would turn that down a hint. I think the general idea here is a bolognese with spiralised veg. In which case there are probably other ragu recipes I’d head to before this one, albeit I’d like to try again with minor tweaks. The courgette and feta works well, the feta adding a heft to the dish that spiralised veg can miss, making it a more interesting pasta substitute. From Tom Kerridge, Dopamine Diet

This is such a simple, wholesome and tasty dish. I really can’t fault it for the effort and time involved. I adjusted slightly to make it a warm plate of food rather than a salad, and it worked. Cook the pasta, add the beans to the boiling water for the final few minutes, drain, return to heat with tomatoes, oil and balsamic, season, stir, add feta to each portion – The reason for the last step is that you can easily make lots of this and freeze it, but the cheese won’t freeze well so keep it separate – Finish…
