    Spinach, squash and goat's cheese filo pie

    Really excellent, and oddly even better for being gold the next day when it started pure shape on the plate a little more yearly also. Was a while ago now, I forget many of the details… Holidays and other assorted busy-ness has resulted in a bit of a back log. However, I do remember enjoying this a whole bunch! Oh, also the suggestion to bake in a pan is kinda pointless and I suspect only their for the shiny pictures. The only recommendation I make is that it shouldn’t be a pie dish that scratches as you have to cut…

    Sweet potato and goat's cheese balls

    The challenge with “meatballs” containing spinach and sweet potato is most definitely the moisture.  Squeezing the wilted spinach well is obviously required.  But the potato is trickier.  Leaving the mashed up potato in the fridge for a period helped, however even after 45 minutes the mixture was distinctly soggy.  If you’re truly invested then perhaps suspending it overnight in muslin or a sieve would do the job… But I question the worth.  The addition of breadcrumbs to the mix to dry things out a little was likely required and it’s quite possible that adding more of them than suggested in…
