This is advertised as a butternut dal, but honestly it’s the coconut that really shines through here. Lovely and comforting, much more powerfully flavoured than most dals and combines less well with the usual accompaniments of yoghurt, chutney and pickles, instead quite happily standing on its own. I’ve never used coconut “cream” before, but honestly it might be the thing I stick with from now on, if there’s any desire for the coconut to shine through. Much stronger effect on the final dish. The butternut as ever is an inoffensive addition, mostly providing interest through texture. From: https://www.jamieoliver.com/recipes/vegetables-recipes/butternut-squash-dal/

Leon, pg. 231 The marinade is crucial here, almost does a cerviche kinda thing… Only it’s chicken, so don’t eat it until you apply some heat. Pumpkins were oddly difficult to come by, so used a squash. Really enjoyed. Quite quick and simple as long as you remember to prepare the night before. Would definitely do again.

The Doctor’s Kitchen, pg. 206 I’ll be honest… Used the whole can of coconut milk. What on earth am I going to do with a partial can of coconut milk before it goes off? Burnt the almonds. Seem to taste fine so I’ll persevere with these ones. So I definitely started this incorrectly. The initial frying of the paste and cream should have been much drier, such that the butternut chunks then take on colour. But it seems fine. In fact, in hindsight the milk should have been cream… But where the hell do you get that?
