Lovely treatment of the duck, the timings of get the fat nice and rendered then flip it and cook for another 5 or more minutes, depending on size and how you like it, were spot on. Very pleasant marinade, though a hint too sweet perhaps, I would half the sugar next time. Seedlip was used instead of gin, as specced in the recipe, and if poured in at the end of cooking and thickened up it makes a great sauce. The crisps were nice and flavoursome, but a little too hard, with only the fatter, softer chunks coming out really…

Just spot on really. Excellent, quick way of roasting a leg. Time needs to be adjusted slightly for size of joint, and this one was 5 or so minutes over-done, perhaps. Although with all the flipping back and forth and the constant basting, and the obligatory rest period before serving; it was so juicy that it wasn’t any worse off for the extra time. Another run out for this, after indulging not all that long ago in truth (linked at the bottom). Heavily modified from the recipe, using only raisins and their rum soaking sped up with a few minute in a saucepan. Really quite wonderful, one of the best loaves I’ve ever made. From Dough – Richard Bertinet, pg. 153

Used frozen sardines as fresh ones are remarkably difficult to find. Really quite excellent and fresh, which came as a great surprise. The potatoes were Charlottes, buttery and fudgey, just wonderful. Must be careful in the toasting of the pine nuts, so easy to catch on the heat. Just prevented ruination here by a handful of seconds. Good, quick fix. Fresh thanks to the celery, and wholesome without a hint of decadence. Doctor’s Kitchen – Eat To Beat Illness, pg. 180
