Roast Topside of Beef & Carrots

Tom Kerridge – Lose Weight pg. 156 So this takes a while… 4 hours in total. Be prepared…  I don’t know exactly why, perhaps the cut was actually slightly different to the one recommended, but the beef shredded during carving. As such it ended up as a stew. Is good. Definitely lean, which is great. Although I’m certain that this would be tastier with a fatty joint, and that the topside would have been better served dry roasted.  I might pull back on the tomato and paprika slightly.   The treatment of the kale is great, shows you don’t need…

Golden Snap Biscuits and Soft, Chewy White Chocolate Cookies

Rewarding ourselves for a successful week of health… with sugar and fat. First the ginger snaps, only Lisa has the palate of a toddler so we removed the ginger. Creating a beautiful, buttery, crisp biscuit… Which really feels like all it’s missing is a little ginger. Made with butter rather than margerine. They are very tasty though. A great dunking biscuit. The chewy cookies are off the sort you would purchase in a paper bag, full of butter and sugar. Sort of failed cakes in which the sugar cools and condenses to form a soft but chewy monstrosity. Write chocolate used…

    Pork Tenderloin with Ponzu Dressing

Tom Kerridge – Lose Weight, pg. 166 The pork is taking more like 20 or 25 minutes, rather than 7… Confusing. Maybe this is much thicker than the intended piece? It was the same weight though. Lovely bok choi. Messed the pork around.  The recipe says 7 minutes in the oven, but there’s no way…  Took it out to rest before realising it wasn’t done. This took 30 minutes to reach temperature. Really nice, pork dried slightly, but not so bad. Trust the thermometer. There were lovely pan juices to drizzle over the pork. The ponzu is great. The bok…

    Butternut Massaman Curry

The Doctor’s Kitchen, pg. 206 I’ll be honest…  Used the whole can of coconut milk.  What on earth am I going to do with a partial can of coconut milk before it goes off? Burnt the almonds. Seem to taste fine so I’ll persevere with these ones.  So I definitely started this incorrectly.  The initial frying of the paste and cream should have been much drier, such that the butternut chunks then take on colour. But it seems fine.  In fact, in hindsight the milk should have been cream… But where the hell do you get that?

Japanese Greens & Mushroom Stir Fry

Doctor’s Kitchen, pg 159 Used buckwheat soba; Used beansprouts instead of spring onion, I believe the onion would be better, but the beansprouts are slightly better FODMAP.  Couldn’t find sesame seeds…  Added chili furikake instead, this with the sliced chilli also it was a little too hot.  Really good, very quick.

    Lamb Mince Curry

Tom Kerridge – Lose Weight, pg. 160 Many onions… too many? No puy lentils, so beans. Very nice, does work with beans, needs a good couple of good pinches of salt. Could punch up the meat with some flavour in the oven. Wouldn’t lose any of the onions.
